My favourite breakfast dish of all time.

The saying "A picture is worth a thousand words" does not apply here.
While I won't be writing a thousand words, I do need to describe my favourite breakfast of all time because the picture cannot convey the flavour of this dish; it's absolutely out of this world.

On the restaurant menu, it's simply called "Signature Egg" but the name is an understatement to it's splendour. Truffles transform two gently poached and perfectly shaped eggs into little goldmines of richness, earthy and pungent, reminiscent of the earth from which the truffles emerged. When dipped into the salty truffle sauce into the middle of the plate, I'm reluctant to swallow and lose the flavour exploding on my tongue. Hence, two eggs seem barely enough on their own;  they need to be shared between the other deceptively plain looking ingredients scattered around the plate's edge.

The small golden balls contain a nugget of smoked salmon encased in soft, sweet mashed potato that is golden fried to a thin, crunchy crust. Then there's the smoked salmon on its own, and hiding next to the egg on the right of the plate, is a small portion of silky smooth light cream cheese; also two large shavings of truffle sitting atop each egg. Plus a thin slice of radish which I ignored because I could never work out where it should fit into the equation. Perhaps it was just an annoying garnish never meant to be eaten in the first place. Whatever its purpose, it gets tossed aside by me so as to not contaminate the other perfect ingredients.

I ordered this yesterday morning for the second time but because we were leaving early for a day tour and had to be in the lobby by 0650, I didn't have time to pay homage  to the flavours. In my haste I threw a whole golden nugget into my mouth which left me with large blister on the roof of my mouth, testament to my greedy expectation. It was worth it though. :)
